Italian Chef Gabriele Bonci, known as the “Michelangelo of Pizza,” has opened a restaurant in Miami.

In his native Rome, Italian chef Gabriele Bonci is known as the “Michelangelo of Pizza.”

Now, you can try his masterworks right here in Miami.

Bonci Pizza, located inside the Wynwood Cube, has 70 seats, including 14 tables on the patio, and it gives you plenty of reasons to keep coming back. With more than 1,500 recipes in his repertoire, Bonci offers new pizzas every day, with some only available once a year.

What makes these pizzas special? Chef Bonci, who also opened a Chicago outpost, believes in the principle of three, as in using recipes that use three high-quality ingredients. His signature dough, made with a proprietary blend of heritage stone ground Italian flours, takes 72 hours to rise.

When they’re ready, the pizzas are cut into squares with scissors, served on cast iron trays and sold by the pound.

Bonci Pizza is now open in the Wynwood Cube.

Some flavors are only made once a year, but here are a few you’ll find most days: meatball, sopressata and zucchini, ricotta, lemon and black pepper (yes, that’s all on one pizza). There’s also a potatoes-and-rosemary pizza we can’t stop thinking about. The menu also offers an antipasto and a couple of salads, too.

The chef also plans to create menu items inspired by Miami’s culture.

“The people of Miami are full of flavor, and they appreciate food that is accessible but also delicious and satisfying,” said Chef Bonci in a statment. “Between the vibrancy of the Wynwood Arts District, the weather and the culture, coming here was the obvious next place to open.”
